Chilies and basil add punch in this classic Thai dish. Red pepper flakes or red chili paste may be substituted for the fresh chilies, but don't stint on the fresh basil.

Ingredients

ounces shrimp, fresh or frozen but thawed, peeled and deveined (31 count frozen shrimp are fine) |

cup fresh basil leaves, chopped |

green chili pepper, minced |
| 1 |
red chili pepper, minced |

cloves garlic, minced |
| 1 |
tablespoon coriander, minced (stems) |
| 1/3 |
cup green onion, chopped |

teaspoons oyster sauce |
| 1 |
teaspoon fish sauce |
| 1 |
teaspoon sugar |
| 1 |
tablespoon olive oil or soy bean oil |
Directions
- Heat the oil in a woke or large pan set on high heat. Sauté the garlic, coriander stems, and shrimp for 30 seconds.
- Add fresh red and green chilies, fish sauce, oyster sauce, sugar, spring onion, and basil leaves.
- Sauté again briefly, but be careful not to overcook.
- Garnish with coriander leaves and serve with steamed rice.
