Apple Muffin Recipe

Makes 12 servings


Fiber is a problem.

Ingredients
4 egg whites
1/2 cup applesauce
1/4 cup canola oil
2/3 cup white sugar
1/4 cup brown sugar
1 tsp. vanilla extract
2 large granny smith apples, thin sliced
1 cup flour
1 cup whole wheat flour
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. lemon peel
1/4 tsp. nutmeg
1/4 tsp. salt
Directions
  1. Preheat oven to 350 degrees.

  2. Combine eggs, sugar, applesauce, oil and vanilla in a medium sized bowl.

  3. Combine flour and spices in another med. bowl, add apples to coat.

  4. Add wet ingredients to dry, stir until just combined.

  5. Fill batter into paper cup lined muffin pans (or greased, which I am always too lazy to do) until about 3/4 full.

  6. Bake until golden brown and springy to the touch, about 25 minutes. Watch them towards the end. Don't overbake!
