A low fat/low sodium vegatarian soup.

Ingredients

cups low fat/low sodium chicken broth |
| 3 |
cups water |
| 1/2 |
cup brown rice |
| 1/2 |
cup lentils |
| 2 |
cups carrots, sliced |
| 15 |
oz. chopped tomatoes |
| 1 1/2 |
tsp. minced garlic |
| 1/4 |
tsp. basil |
| 1/4 |
tsp. oregano |
| 1/4 |
tsp. thyme |
| 1 |
tbs. parsley |
| 2 |
tbs. cider vinegar |
Directions
- Combine all ingredients in a pot. Bring to a boil.
- Turn down heat to simmer and cook about 40 - 45 minutes until rice, lentils and carrots are done.
- Add parsley and vinegar at the end.
