These garlic green beans can be made with other nuts, or bacon if you want. I have only made this dish with fresh green beans, but it would probably work OK with frozen one. In that case, I would defrost the beans, but not cook them before the final step. The carb count is similar.
| 1 | lb. green beans, remove stem end |
| 1 | tbsp olive oil |
| 2 | cloves of garlic, crushed |
| 3 | tbsp pine nuts |
| 1 | Salt and pepper to taste |
- Cook green beans for 2 to 3 minutes, either in a lot of salted boiling water (preferred) or in the microwave. You want them to be just barely fork-tender, but still retain their bright green color.
- Heat oil in skillet over medium heat until hot, and sauté crushed garlic and pine nuts for about a minute, until garlic is fragrant.
