Spinach salad with a simple red wine vinegar dressing

Ingredients

grams baby spinach - 1 cup |
| 1 |
small tomato |
| 1 |
tsp. red wine vinegar , approximately |
| 1 |
salt, pepper, and Italian seasoning to taste |
Directions
- Clean and dry spinach (and chop if using large spinach leafs)
- Dice tomato
- Couple dashes of salt, pepper, and Italian seasoning
- Add the vinegar a little at a time (or if it is too strong dilute the salad with a little water or juice left from the tomatoes)
- You can add any other vegetables you want (yellow peppers are really good too)
- To make this a meal instead of a side, add some grilled chicken or turkey breast meat to the salad. (If you're making it into a meal you will want more than 1 cup of spinach.)
