Spinach Salad

Makes 1 serving

Spinach salad with a simple red wine vinegar dressing

Ingredients
21 grams baby spinach - 1 cup
1 small tomato
1 tsp. red wine vinegar , approximately
1 salt, pepper, and Italian seasoning to taste
Directions
  1. Clean and dry spinach (and chop if using large spinach leafs)

  2. Dice tomato

  3. Couple dashes of salt, pepper, and Italian seasoning

  4. Add the vinegar a little at a time (or if it is too strong dilute the salad with a little water or juice left from the tomatoes)

  5. You can add any other vegetables you want (yellow peppers are really good too)

  6. To make this a meal instead of a side, add some grilled chicken or turkey breast meat to the salad. (If you're making it into a meal you will want more than 1 cup of spinach.)
