| 1 | small onion, chopped |
| 1 | tbsp olive oil |
| 2 | stalks celery, chopped |
| 2 | carrots, chopped |
| 1 | large potato, chopped |
| 1 | large zucchini, chopped |
| 4 | c vegetable broth |
| 6 | diced tomatoes |
| 2 | cloves garlic, minced |
- Heat olive oil
- Add onion, celery, carrots, garlic
- cook for about 4 minutes
- Add tomatoes, broth, zuchinni, and potatoes
- Bring to a boil
- reduce heat and cook for about 1/2 hour
- Serve by itself or with toast, or a bit of low fat cheddar sprinkled on top of the bowl.
