Vegetable Stoup Recipe

A tasty way to get your veg=)

Ingredients
1 small onion, chopped
1 tbsp olive oil
2 stalks celery, chopped
2 carrots, chopped
1 large potato, chopped
1 large zucchini, chopped
4 c vegetable broth
6 diced tomatoes
2 cloves garlic, minced
Directions
  1. Heat olive oil

  2. Add onion, celery, carrots, garlic

  3. cook for about 4 minutes

  4. Add tomatoes, broth, zuchinni, and potatoes

  5. Bring to a boil

  6. reduce heat and cook for about 1/2 hour

  7. Serve by itself or with toast, or a bit of low fat cheddar sprinkled on top of the bowl.

  8. Mmmmmmm
