Banana Bran Muffins Recipe

Makes 12 servings


I haven't tried these yet, but sound tasty.

Ingredients
1 tsp. vanilla
1 egg
1/2 cup skim milk
1/4 cup applesauce
1/2 cup SPLENDA
1 tsp baking powder
1 tsp baking soda
1 cup whole wheat flour
1 cup Kellogg's All Bran cereal
2 bananas
Directions
  1. Place the bran and milk in a mixing bowl. Let the mixture stand for about 20 minutes until the bran is softened.

  2. Preheat oven to 375 deg F.

  3. Sift the flour, sugar, salt, baking powder, and cinnamon into a mixing bowl. Whisk together with the bran mixture.

  4. Add the vanilla, egg, oil, and applesauce. Whisk until smooth. Do not over mix.

  5. Line a muffin tin with muffin papers and fill each muffin paper with an equal amount of batter. Bake for 20 minutes.
