I haven't tried these yet, but sound tasty.
| 1 | tsp. vanilla |
| 1 | egg |
| 1/2 | cup skim milk |
| 1/4 | cup applesauce |
| 1/2 | cup SPLENDA |
| 1 | tsp baking powder |
| 1 | tsp baking soda |
| 1 | cup whole wheat flour |
| 1 | cup Kellogg's All Bran cereal |
| 2 | bananas |
- Place the bran and milk in a mixing bowl. Let the mixture stand for about 20 minutes until the bran is softened.
- Preheat oven to 375 deg F.
- Sift the flour, sugar, salt, baking powder, and cinnamon into a mixing bowl. Whisk together with the bran mixture.
- Add the vanilla, egg, oil, and applesauce. Whisk until smooth. Do not over mix.
- Line a muffin tin with muffin papers and fill each muffin paper with an equal amount of batter. Bake for 20 minutes.
