A very Special Pasta dish!
|
Ingredients
| 8 |
ounce pasta |
| 1 |
tablespoon olive oil |
| 6 |
cloves garlic, minced |
| 1/2 |
cup chicken broth |
| 1/4 |
cup white wine |
| 1/4 |
cup lemon juice |
| 1/2 |
teaspoon lemon zest |
| 1 |
salt to taste |
| 2 |
teaspoons freshly ground black pepper ( I use 1 Teaspoon) |
| 1 |
pound fresh shrimp, peeled and deveined |
| 1/4 |
cup butter |
| 3 |
tablespoons chopped fresh parsley |
| 1 |
tablespoon chopped fresh basil |
Directions
- Cook Pasta
- In a large saucepan saute garlic in olive oil for 1 minute
- Add broth, wine, lemon juice, lemon zest, salt and pepper.
- Bring to a boil and reduce to a simmer until liquid is reduced by 1/2.
- Mix in shrimp, butter, parsley, and basil and cook for two minutes or until shrimp are opaque.
- Stir in cooked pasta cook two minutes and str until coated.
