Lemon Pepper Shrimp

Makes 4 servings

A very Special Pasta dish!

Ingredients
8 ounce pasta
1 tablespoon olive oil
6 cloves garlic, minced
1/2 cup chicken broth
1/4 cup white wine
1/4 cup lemon juice
1/2 teaspoon lemon zest
1 salt to taste
2 teaspoons freshly ground black pepper ( I use 1 Teaspoon)
1 pound fresh shrimp, peeled and deveined
1/4 cup butter
3 tablespoons chopped fresh parsley
1 tablespoon chopped fresh basil
Directions
  1. Cook Pasta

  2. In a large saucepan saute garlic in olive oil for 1 minute

  3. Add broth, wine, lemon juice, lemon zest, salt and pepper.

  4. Bring to a boil and reduce to a simmer until liquid is reduced by 1/2.

  5. Mix in shrimp, butter, parsley, and basil and cook for two minutes or until shrimp are opaque.

  6. Stir in cooked pasta cook two minutes and str until coated.
