White Chili

Makes 8 servings

This is a great comfort soup a lot like tortilla soup...maybe even a version thereof.

Ingredients
18 ounce Boneless Skinless Chicken Breasts
12 oz. Water
1 oz. Extra Virgin Olive Oil
1 medium Onion
1 cup Peppers, Chili, Green, Canned
2 tbsp Cumin
1 tsp Cloves
1 tbsp Salt
1 tbsp Pepper
1 tsp Oregano
4 cups Great Northern Beans (canned)
16 oz. Tortilla Chips
8 oz. Cheddar Cheese
Directions
  1. Boil the chicken in a sauce pan with the water and some salt and pepper to taste.

  2. While that's working, sautee the onion (chopped finely) in the olive oil until translucent.

  3. Add the green chiles and cumin, cloves, salt, pepper, and oregano to the onion sautee until it browns and forms a paste-like consistency.

  4. Take the chicken out of the water, and add the broth (2-3 cups depending on desired thickness) to the onion-chile pot.

  5. Chop the chicken roughly and add it along with the rinsed beans to the pot.

  6. Let simmer for 20 min.

  7. Put it into bowls and top it with cheese and tortilla chips to taste.
