This is a great comfort soup a lot like tortilla soup...maybe even a version thereof.

Ingredients

ounce Boneless Skinless Chicken Breasts |
| 12 |
oz. Water |
| 1 |
oz. Extra Virgin Olive Oil |
| 1 |
medium Onion |
| 1 |
cup Peppers, Chili, Green, Canned |
| 2 |
tbsp Cumin |
| 1 |
tsp Cloves |
| 1 |
tbsp Salt |
| 1 |
tbsp Pepper |
| 1 |
tsp Oregano |
| 4 |
cups Great Northern Beans (canned) |
| 16 |
oz. Tortilla Chips |
| 8 |
oz. Cheddar Cheese |
Directions
- Boil the chicken in a sauce pan with the water and some salt and pepper to taste.
- While that's working, sautee the onion (chopped finely) in the olive oil until translucent.
- Add the green chiles and cumin, cloves, salt, pepper, and oregano to the onion sautee until it browns and forms a paste-like consistency.
- Take the chicken out of the water, and add the broth (2-3 cups depending on desired thickness) to the onion-chile pot.
- Chop the chicken roughly and add it along with the rinsed beans to the pot.
- Let simmer for 20 min.
- Put it into bowls and top it with cheese and tortilla chips to taste.
