Pumpkin Soup Recipe

Ingredients
1/2 cup chopped onion
2 tbsp. butter
3 1/2 cups vegetable broth
1 cup chopped potato
1/2 cup chopped red pepper
1 cup corn
2 cups pumpkin
2 cups skim milk or fat free half & half
Directions
Saute onion in butter until soft but not browned. Add broth, potatoes, corn and chopped pepper. Cover and simmer 15 minutes until the vegetables are tender. Stir in one 16 oz can of pumpkin and half & half. Heat over low heat, stirring often until heated through
