Lentil and Carrot Soup Recipe

light lunch

Ingredients
1/2 tbsp light olive oil
1 medium onion, diced
2 medium carrots, diced
1 stalk celery, medium, diced
100 g green lentils
2 cups bouillon
1 cracked black pepper
1 pinch salt
1 pinch dried thyme
Directions
  1. In a solid based pan heat oil

  2. Add onion and celery and sweat for 5 mins

  3. Add carrot, sweat for further 5 mins

  4. Add lentils, dried thyme and bouillon, bring to boil.

  5. Simmer, covered, for 30 mins.

  6. Season to taste
