This tummy-warming dish takes only minutes to assemble. It tastes great as a main dish paired up with a salad. Or try it as side dish with fish or poultry.

Ingredients

oz dry lentils, about 1 cup, rinsed |

cup uncooked brown rice |

cup carrot(s), shredded |

cup water |

packet onion soup mix, reduced-sodium preferred |

tsp dried basil |
| 1 |
tsp garlic powder |
| 1 |
tsp olive oil |
Directions
- Rinse lentils.
- Place all ingredients in a large pot. Bring to a boil. Reduce heat, cover and cook until rice is done, about 20 minutes. Yields 1 cup per serving.
