Lentil soup with ground beef and mirapoux veggies. Serving size is 1 cup
| 1 | lb. Dry Lentils |
| 1 | lb. Beef, ground 95%, browned |
| 1 | cup onion, chopped |
| 1 | cup celery, chopped |
| 1 | cup carrot, chopped |
| 10 | cup water |
| 3 | clove garlic, minced |
| 4 | tbsp salt |
| 3 | tbsp cumin |
| 2 | tbsp curry powder |
| 1/2 | tsp chili powder |
| 1 | tsp black pepper |
- Place dry lentils and water in a pot and boil.
- Brown ground beef with garlic, onion, celery, carrot and seasonings then add to pot of lentils.
- Reduce heat to simmer and continue to cook until lentils are tender. Adjust seasonings as necessary to taste.
- Serve over Brown Rice
