Low Fat Banana Bread

Ingredients

large eggs |
| 3/4 |
cup sugar |
| 3 |
medium bananas |
| 1/3 |
cup buttermilk |
| 1 |
tbsp canola oil |
| 1 |
tsp vanilla extract |
| 1 3/4 |
cups flour |
| 2 |
tsp baking powder |
| 1/2 |
tsp salt |
| 1/2 |
tsp baking soda |
Directions
- Preheat oven to 325.
- Lightly grease loaf pan and dust with flour.
- Beat eggs and sugar together in a large bowl until thick and light, about 5 minutes.
- Mix in mashed bananas, buttermilk and vanilla.
- Sift flour, baking powder, baking soda and salt over mixture, beat until just blended.
- Transfer batter to pan.
- Bake until golden brown on top and tester inserted into center comes out clean, about 1 hour.
