Low Fat Banana Bread

Low Fat Banana Bread

Ingredients
2 large eggs
3/4 cup sugar
3 medium bananas
1/3 cup buttermilk
1 tbsp canola oil
1 tsp vanilla extract
1 3/4 cups flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
Directions
  1. Preheat oven to 325.

  2. Lightly grease loaf pan and dust with flour.

  3. Beat eggs and sugar together in a large bowl until thick and light, about 5 minutes.

  4. Mix in mashed bananas, buttermilk and vanilla.

  5. Sift flour, baking powder, baking soda and salt over mixture, beat until just blended.

  6. Transfer batter to pan.

  7. Bake until golden brown on top and tester inserted into center comes out clean, about 1 hour.
