Very yummy chicken recipe- the pomegranate seeds go lovely!

Ingredients
| 1 |
pomegranate , seeded |
| 1 |
lb boneless, skinless chicken breast halves |
| 1 |
tsp thyme |
| 1/2 |
tsp salt |
| 1/2 |
tsp pepper |
| 2 |
tbsp vegetable oil |
| 1 |
medium onion |
| 2 |
cloves garlic |
| 1/2 |
c broth |
| 1/4 |
c orange juice |
| 1 |
tbsp Dijon mustard |
| 1 |
tsp cornstarch |
| 3 |
c cooked rice |
Directions
- Seed pomegranate, set aside.
- rub chicken breasts with thyme, salt and pepper.
- In large skillet, heat oil over med heat until hot. Add chicken and cook 10 minutes, or not pink, turning once. Remove chicken.
- Add onion and garlic. cook 5-7 minutes until onion is golden.
- Return chicken to skillet.
- In small bowl, whisk broth, orange juice, mustard, and cornstarch. add to skillet. Cook 1-2 minutes until thick.
- stir in pomegranate seeds. Heat through. Serve over rice.
