Chicken with spinach, carrots, and rice- very tasty!

Ingredients

lb chicken tenders |
| 2 |
tbsp margarine |
| 1 1/4 |
cups chicken broth |
| 1/2 |
cup carrots, small sticks |
| 1 |
dash of nutmeg |
| 1 |
medium onion, chopped |
| 1 |
tbsp cornstarch |
| 10 |
oz chopped frozen spinach, thawed and drained |
| 1/2 |
tsp oregano |
| 1 1/2 |
cups instant brown rice |
| 2 |
tbsp grated Parmesan cheese |
Directions
- Place carrots and margarine and onion in microwaveable dish. Cover and cook 2 minutes on High.
- Stir cornstarch into chicken broth, add to dish with spinach, chicken, rice, oregano, and nutmeg.
- Cover and cook 10 minutes or until chicken is fork tender.
- Stir in cheese.
