A fast, tasty breakfast scramble.
| 2 | eggs |
| 1/3 | oz Bacon, or 2 tbsp. bacon bits |
| 4 | tsp sour cream, or 2 tbsp. reduced fat |
| 2/3 | c. mushrooms, cleaned and sliced |
- Spray a small frying pan with cooking spray and place over medium heat. Add mushrooms, spreading them evenly over the pan.
- While mushrooms begin to cook, scramble together eggs and bacon. Pour mixture over mushrooms and scramble with a fork over medium heat until cooked through.
- Top with sour cream and serve warm.
