Most of the calories are in the cheese and walnuts. Leave them out if you want to be boring.
| 2 | cups apples (4 small apples, use different types) |
| 1/2 | red onion |
| 4 | cups lettuce |
| 3 | tbsp white wine vinegar |
| 1 1/2 | tbsp olive oil |
| 1/2 | tsp wholegrain mustard |
| 25 | g goat's cheese (2 tbsp) |
| 1/4 | cup walnuts, toasted |
- Add a good pinch of finely ground pepper to the dressing.
- Prepare the apples, walnuts, onions and dressing ahead of time. Combine at the last minute. Put the cheese and walnuts on top after serving.
- When you cut the apples, put the vinegar directly onto them, then drain - this will keep them from turning brown.
- Soak the onions in the dressing for a while before building the salad.
