Baked Apple Squares

Makes 12 servings

Suggestion: Separate equally into 12 compartment muffin tin to ensure portion accuracy!

Ingredients
1/2 cup brown sugar
1/4 cup vegetable oil
1 egg
1/2 cup flour
1 tsp cinnamon
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp nutmeg
3 small apples, peeled, cored and diced
1/4 cup rolled oats, quick cooking
Directions
  1. Preheat oven to 350. Grease or spray baking dish. Mix brown sugar, vegetable oil and egg until smooth. In another bowl, mix flour, cinnamon, nutmeg, baking powder and soda. Add dry mix to the wet mix and stir until smooth. Dump in apples and rolled oats and stir until well mixed. Bake for 30 minutes, cut into 12 squares.
