Lentil and Barley Soup

Ingredients
1 cup lentils
2 cups black beans
2 cups yam, cubed
1 cup cassava, cubed
1 1/2 cups plantain, cubed
1 onion, medium
1 cup stewed tomatoes
1 cup carrots, chopped
1 cup celery, chopped
1 tbsp extra virgin olive oil
1 tsp pepper
1 tsp cumin
1/2 tsp salt
Directions
  1. - sauted onions, celery and some of the carrots in some chicken broth

  2. - add the remainder of the ingredients and bring to a boil for 1 hour
