Lentil and Barley Soup
| 1 | cup lentils |
| 2 | cups black beans |
| 2 | cups yam, cubed |
| 1 | cup cassava, cubed |
| 1 1/2 | cups plantain, cubed |
| 1 | onion, medium |
| 1 | cup stewed tomatoes |
| 1 | cup carrots, chopped |
| 1 | cup celery, chopped |
| 1 | tbsp extra virgin olive oil |
| 1 | tsp pepper |
| 1 | tsp cumin |
| 1/2 | tsp salt |
- - sauted onions, celery and some of the carrots in some chicken broth
- - add the remainder of the ingredients and bring to a boil for 1 hour
