Quick and easy breakfast standby. Two bite frittatas made in silicone mini muffin pans, 1 or 2 paired with a piece of fruit and a slice of toast and all four food groups are covered.
| 4 | large eggs |
| 1/4 | cup skim milk |
| 1/2 | teaspoon salt |
| 1/4 | cup diced red bell pepper |
| 1/4 | cup grated cheddar cheese |
- Heat your oven to 350° F and coat two (12 cup)mini muffin pans with nonstick cooking spray(if you're not using silicone)
- Whisk together the eggs, milk, and salt in a medium bowl, then evenly distribute the egg mixture among the muffin cups.
- Sprinkle equal amounts of the cheese and red pepper into each cup
- Bake the frittatas until they are puffy and the edges are golden brown, about 20 to 25 minutes. (If necessary, run a butter knife around the edge of each one to loosen them before removing them from the pan.) Makes 12 mini frittatas.
