E's Mini Frittatas (Adapted From Familyfun.Go.Com) Recipe

Makes 24 servings


Quick and easy breakfast standby. Two bite frittatas made in silicone mini muffin pans, 1 or 2 paired with a piece of fruit and a slice of toast and all four food groups are covered.

Ingredients
4 large eggs
1/4 cup skim milk
1/2 teaspoon salt
1/4 cup diced red bell pepper
1/4 cup grated cheddar cheese
Directions
  1. Heat your oven to 350° F and coat two (12 cup)mini muffin pans with nonstick cooking spray(if you're not using silicone)

  2. Whisk together the eggs, milk, and salt in a medium bowl, then evenly distribute the egg mixture among the muffin cups.

  3. Sprinkle equal amounts of the cheese and red pepper into each cup

  4. Bake the frittatas until they are puffy and the edges are golden brown, about 20 to 25 minutes. (If necessary, run a butter knife around the edge of each one to loosen them before removing them from the pan.) Makes 12 mini frittatas.
