| 4 | cups canned or frozen sour cherries (9068) |
| 3 | tbsp MINUTE tapioca (96721) |
| 1 1/3 | cup sugar |
| 1/4 | tsp almond extract (2050) |
| 1 | tbsp margarine |
- Heat oven to 400 degrees. Mix fruit, tapioca, sugar and extract in a bowl; let stand 15 minutes.
- Fill pastry-lined pie plate with fruit mixture. Dot with margarine. Cover pie with a top crust; seal and flute edges. Cut several slit to permit steam escape. Bake for 1 hour or until juices form bubbles that burst slowly. Cool.
- Variation: For a golden top crust, brush with beaten egg before baking.
