Blackthorne's Hearty Gingerbread

Virtually fat free gingerbread, low cholesterol; 93 calories per piece., rates a B. Has a heartier texture than gingerbread made solely with white flour.

Ingredients
1/3 cup unsweetened applesauce
1 cup turbinado sugar
1/3 cup egg beaters or 2 egg whites
1/3 cup lite soy milk
1/2 cup flour
1/2 cup whole wheat flour
1/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon allspice
1/4 teaspoon ground cloves
1 cooking spray (butter flavored is best)
Directions
  1. Preheat oven to 325F.

  2. Spray small 8" cake pan with cooking spray.

  3. Combine applesauce, egg beaters, lite soy milk, and turbinado sugar. Allow turbinado sugar to dissolve.

  4. Sift together dry ingredients. Add to sugar/applesauce/egg/soy milk mixture.

  5. Pour into prepared cake pan.

  6. Bake 25-30 minutes or till done.
