cup unsweetened applesauce |

cup turbinado sugar |
| 1/3 |
cup egg beaters or 2 egg whites |
| 1/3 |
cup lite soy milk |
| 1/2 |
cup flour |
| 1/2 |
cup whole wheat flour |
| 1/4 |
teaspoon salt |
| 1 |
teaspoon baking soda |
| 1 |
teaspoon baking powder |
| 2 |
teaspoons ground ginger |
| 1 |
teaspoon ground cinnamon |
| 1 |
teaspoon ground nutmeg |
| 1/2 |
teaspoon allspice |
| 1/4 |
teaspoon ground cloves |

cooking spray (butter flavored is best) |
Directions
- Preheat oven to 325F.
- Spray small 8" cake pan with cooking spray.
- Combine applesauce, egg beaters, lite soy milk, and turbinado sugar. Allow turbinado sugar to dissolve.
- Sift together dry ingredients. Add to sugar/applesauce/egg/soy milk mixture.
- Pour into prepared cake pan.
- Bake 25-30 minutes or till done.
