Non-fat Whole Wheat Banana Oatmeal Muffins

Makes 12 servings

Applesauce is substituted for oil in this low fat recipe

Ingredients
1 1/2 cups Whole Wheat Flour
1 cup Rolled Oats
1/4 cup granulated sugar
2 tsp baking powder
1 tsp Baking soda
1/2 tsp salt
2 eggs
1/2 cup applesauce
1/4 cup skim milk
1 cup bananas
Directions
  1. In large bowl meausre in first six dry ingredients. Stir to mix. Make a well in the center.

  2. In small bowl, beat eggs until frothy. Mix in applesauce, milk and mashed bananas. Pour into well. Stir just to moisten. Batter will be lumpy. Fill greased muffin cups 3/4 full. Bake in 400 degree F for 20-25 minutes.
