Baked Goat Cheese on Baguettes

You'll get rave reviews from all of your guests when you serve this rich appetizer! Plan to have it ready ahead of time to pop in the oven!

Ingredients
8 ounces goat cheese(4 oz each or 2 logs), cut into total of 8 (1-inch) slices
14 1/2 ounce Muir Glen organic tomatoes, diced and drained
1/4 cup kalamata olives,pitted,coarsely chopped
1 teaspoon thyme, fresh leaves, chopped
1/4 teaspoon crushed red pepper
1 tablespoon olive oil
24 slices baguette, (1/2-inch thick) , toasted (about 8 ounces)
Directions
  1. Preheat oven to 350oF. In ungreased 1-quart shallow oven-safe gratin dish or 9-inch glass pie plate, place cheese in single layer.

  2. Sprinkle tomatoes, olives, thyme leaves and red pepper over cheese. Drizzle with olive oil. Bake 15 to 20 minutes or until warm.

  3. Serve with baguette slices.
