Pumpkin Gobs

Makes 24 servings

These are fattening but perfect moist cookie for Thanksgiving!

Ingredients

Cookies:
2 cups pumpkin (1 16oz. Can)
2 cups brown sugar
1 cup oil
2 eggs
1 tsp. Vanilla
3 cups flour
1 tsp. Cinnamon
1 tsp. Salt
1 tsp. Baking powder
1 tsp. Baking soda

Filling:
8 oz. cream cheese, softened
1 stick margarine, softened
2 cups powdered sugar
1 tsp. vanilla
Directions
  1. Cream the pumpkin, brown sugar, oil, eggs

  2. and vanilla extract.

  3. Sift and then add to the pumpkin mixture the flour, cinnamon, salt, baking powder and baking soda.

  4. Bake at 350oF for 10 minutes on lightly greased cookie sheets.

  5. Filling for cookies:

  6. 1 – 8oz. Package of cream cheese, softened

  7. 1 stick margarine, softened

  8. 2 cups powdered sugar

  9. 1 tsp. vanilla
