Ingredients
Cookies: |

cups pumpkin (1 16oz. Can) |
| 2 |
cups brown sugar |
| 1 |
cup oil |
| 2 |
eggs |
| 1 |
tsp. Vanilla |
| 3 |
cups flour |
| 1 |
tsp. Cinnamon |
| 1 |
tsp. Salt |
| 1 |
tsp. Baking powder |
| 1 |
tsp. Baking soda |
Filling: |
| 8 |
oz. cream cheese, softened |
| 1 |
stick margarine, softened |
| 2 |
cups powdered sugar |
| 1 |
tsp. vanilla |
Directions
- Cream the pumpkin, brown sugar, oil, eggs
- and vanilla extract.
- Sift and then add to the pumpkin mixture the flour, cinnamon, salt, baking powder and baking soda.
- Bake at 350oF for 10 minutes on lightly greased cookie sheets.
- Filling for cookies:
- 1 – 8oz. Package of cream cheese, softened
- 1 stick margarine, softened
- 2 cups powdered sugar
- 1 tsp. vanilla
