vegan coconut-almond cookies

Makes 15 servings

I used a recipe for butter balls, but I replaced the butter with coconut oil. They turned out as flat cookies rather than balls, but they're really good. I didn't tell my dad they were vegan until after he ate one. He was truly surprised because they're so yummy.

Ingredients
6 T coconut oil
1/2 cup powdered sugar
1/8 t canola oil
1/8 t salt
1 T vanilla extract (almond is better)
3/4 c. flour
1/4 cup chopped almonds
Directions
  1. cream the coconut oil, canola oil, and powdered sugar.

  2. add salt, almond extract, flour, and almonds.

  3. cover with plastic wrap and freeze for 1 hour.

  4. preheat oven to 300 and grease cookie sheet with coconut oil.

  5. bake for 35-40 minutes.

  6. fill a tea-strainer with powdered sugar and sift over the cookies as soon as you take them out of the oven.
