Low-fat Zuke Muffins

Makes 12 servings

oil replaced with fat free yogurt

Ingredients
1 cup flour
1/2 tbs baking powder
1 tsp baking cocoa
2 tsp cinnamon
4 g splenda (5 packets)
1/2 cup fat free yogurt
1/2 cup 2% milk
1 egg
1 cup shredded zucchini
1/4 cup shredded carrot
1/2 cup raisins
Directions
  1. Sift dry ingredients together.

  2. Mix wet ingredients together well.

  3. Add wet to dry, mix gently til moistened.

  4. Pour into 12 lined muffin cups.

  5. Bake at 350F for 20mins, or until toothpick inserted in centre comes out clean.
