This is the same as my recipe 60193, but I got the oat bran to work on this entry, so the nutrition grade is now B+

Ingredients
| 1 |
cup bananas |
| 1/3 |
cup sugar |
| 1/3 |
cup vegetable oil |
| 1 |
egg |
| 1/3 |
cup skim milk |
| 3/4 |
cup whole wheat flour |
| 1/2 |
cup white flour |
| 1 |
cup oat bran |
| 2 |
teaspoons baking powder |
| 1/2 |
teaspoon baking soda |
| 1/2 |
teaspoon salt |
Directions
- Mix all of the ingredients in a food processor. If mixing by hand, mix dry ingredients together before adding to wet indredients (mix together first.) Bake in 9 x 3 greased loaf pan at 350 degrees approx 40 minutes or until tooth pick inserted comes out clean. Before baking, you may sprinkle loaf with raw can sugar and chopped nuts. (from "Dewey or Don't We? Librarians Cook") I often make these into muffins or mini-muffins.
