I love potatoe and leek soup, however potatoes have the dreaded CARBS! so this is my pretty healthy if i do say so myself soup.
boil/roast your chicken beforehand about half a breast of chicken is perfect.

Ingredients

carrots |
| 1 |
onion diced |
| 1 |
large turnip |
| 3 |
leeks |
| 1/2 |
chicken breast |
| 6 |
oxo stock cubes |
Directions
- Start with boiling a kettle mine had a 1.5L max so i filled it 3 times and put it in a big soup pot
- Stick 4 of the 6 stock cubes in it and let that come to a simmer.
- Chop the carrots, turnip, onion up into smallish bits, then use a liquidizer or a blender to reduce them to small peices, you dont have to be to exact with it you dont want it to be mush (well maybe you do but i personaly dont hehe)
- Dump that in with the water and 4 stock cubes and let that simmer away on a low heat
- Chop the chicken up into small strips or chunks and put that in as its already cooked we dont need to worry about that to much.
- Chop the leeks just straight through to create little circles and when you get to the greeny top end just chop them into strips
- Put the leeks in a collender and wash them, add that to the soup and let it simmer for 10-15 minutes stirring occasionaly.
- After 10-15mins add 2 more stock cubes i find it much easyer to crush these and sprinkle it in rather than chase the cube around the bottom of the pot and stir in.
- Leave it for another 30mins stirring occassionaly then its ready to eat, in my personal opinion the best results are when you leave it off the heat for 6+hours and just stir it every so often, somthing about giving it time to sit makes it taste somehow better i dont know im not a chef lol. anyway i hope you enjoy this recipe its now my favourate soup and if you do enojoy it please let me know!
