PB & J Muffins

Makes 12 servings

My kids love these. I got the recipe off the back of a bag of flour.

Ingredients
2 cups flour
1 1/2 tsp salt
1 tbsp baking powder
1 cup milk
2 large eggs
2/3 cup sugar
1 cup peanut butter
1/3 cup vegetable oil
1/2 cup jam
1/4 cup sugar
Directions
  1. Combine all ingredients except jam and remaining 1/4 cup sugar in bowl and mix on low speed.

  2. Fill muffin cups halfway with the batter. Spoon 2 level teaspoons of jam (I use only 1, it seems to be enough.) Divide remaining batter between the muffin cups.

  3. Bake for 18-20 minutes at 375.
