Wetzel - Crustless Pizza Casserole

Makes 4 servings

A gluten free alternative to pizza

Ingredients
1 large zucchini
3 squash, summer, medium
1 cup broccoli
1 cup mushrooms
1 cup cauliflower
2 cups pasta sauce, meatless
1 lb beef, ground
1 cup cheese, mozzarella
Directions
  1. Prepare meat by browning, drain, and pat dry (may substitute pepperoni or other favorite).

  2. Chop the vegetables and saute until tender.

  3. Mix meat with vegetables and place in a casserole dish.

  4. Pour spaghetti sauce over meat and vegetable mixture.

  5. Top with mozzarella cheese.

  6. Place and 350-degree oven until bubble and brown (approximately 20 minutes).

  7. Serve hot.
