Mexican Stuffed Pepper

Makes 1 serving

Vegetarian stuffed pepper, only rice & cheese...

Ingredients
1 green pepper
1/4 cup brown rice
3 tbsp salsa
1/4 cup Reduced Fat Mexican Cheese (shredded) or 2% cheddar cheese (shredded)
Directions
  1. Cut top off & gut green pepper

  2. Cook rice as directed

  3. When rice is done, stir in the salsa

  4. Layer cheese, then rice/salsa, then cheese, then rice/salsa & finally cheese on top

  5. Bake in oven @ 375 for 5-7 mins (until cheese is melted)
