Annie's Homemade Chicken Soup (pressure cooker recipe)

Makes 8 servings

Easy low-cal high protein chicken soup w/ rice (or substitute pasta)

Ingredients
5 cups chicken
5 cups chicken broth
5 cups water
1 large onion, chopped
1 1/2 cups sliced celery
2 cups sliced carrots
2 tsp salt
1/2 tsp black pepper
1/2 tsp thyme leaves
1/8 gram bay leaves (1)
1 cup uncooked rice
2 tbsp lime juice
Directions
  1. Cook a whole chicken in pressure cooker with 5 cups water for 30 minutes at 15psi. Allow for natural release.

  2. Remove chicken from pot, discard bones and skin, and return remaining chicken to pot.

  3. Add remaining ingredients and cook for 5 minutes at 15psi. remove from heat and allow for natural release.

  4. I much prefer using soup pasta such as Stelline or Risi in this recipe, but the recipe analyzer wouldn't recognize them. If you decide to use pasta instead, do NOT add it until AFTER you have finished pressure cooking all the ingredients. Add 1 cup of your uncooked pasta, and simmer the soup on the stove top for 10 minutes after pressure cooking.

  5. Done!
