Ingredients
3 tablespoons red wine vinegar
1 1/2 teaspoons lemon juice
2 teaspoons fresh oregano, minced
1/2 teaspoon salt
1/8 teaspoon black pepper
1 garlic clove, minced
6 tablespoons olive oil
1/2 medium red onion, sliced thin
1 medium cucumber, peeled, halved lengthwise, seeded and cut into thin slices
2 head romaine lettuce, washed, dried and torn into pieces
10 ounce tomatoes, cored, seeded, and cut into 12 wedges each
1/4 cup parsley, torn
1/4 cup fresh mint, torn
6 ounces roasted red peppers, cut into strips
5 ounces feta cheese, crumbled
