| 3 | large carrots |
| 1/2 | large onion |
| 2 | cups beans |
| 1 | large zucchini |
| 1 | cup rice |
| 10 | ounce chicken thighs |
| 9 | cups water |
- Cook beans first until just soft. Use 3 cups water for every 1 cup beans.
- Add two to three more cups of water, depending on desired consistency of soup.
- Add the rest of the ingredients: vegetables and the chicken with the skin and fat removed.
- Spice as desired.
