vegetarian delight
| 2 | tbsp olive oil |
| 1 | cup onion, chopped |
| 3 | cloves garlic, chopped |
| 1/4 | tsp hot pepper flakes |
| 1 | tsp oregano |
| 1 | tsp paprika |
| 1/2 | cup green pepper, chopped |
| 1 | cup celery, chopped |
| 540 | g garbanzo beans |
| 3 1/2 | c tomatoes,diced |
| 2 | tbsp tomato paste |
| 2 | c rice, cooked |
- Saute onion, garlic, peppers, celery oregano and hot pepper flakes in a saucepan over medium heat until onion is softened.
- Add tomato paste and fry a bit.
- Rinse and drain the garbanzo beans and add to pot along with the tomatoes and paprika.
- reduce heat and simmer until thickened about 25 mins.
- Serve over rice.
