Calorie-Counting Couple Crock Pot Beef N' Onion (Add Broccoli!) Recipe

Makes 6 servings


A quick and easy iron-heavy dish cooked in the crockpot. Perfect for the working Calorie-counting couple with little time to cook healthily. Plenty for dinner and a working lunch (freeze extra two portions for next week!)

Ingredients
1 large onion
25 oz sirloin steak
2 lbs mushrooms
1 cup low sodium chicken broth
1/2 cup water
26 g (one packet) beef onion soup mix
2 lbs broccoli steamed
Directions
  1. Loosely chop onions, toss in bottom of crock pot

  2. Whimper in the kitchen that cutting onions makes your cry (it's OK, we all cry when we cut onions)

  3. Clean and cut mushrooms in half, toss in crock pot

  4. Spin around the kitchen singing you favourite Duran Duran hit from the 1980's

  5. In a separate dish, combine beef onion soup mix, 1/2 cup water and 1 cup low sodium chicken broth

  6. Ponder the lesser points of Dadaism

  7. Place steak, or bits of steak or however you have chosen to divide the mosaic that is your meat over the mushrooms and onions

  8. Pour watery, soupery mix over top of your crockpot creation (remember, you need liquid in the crockpot, oh, and it is time to take the laundry out of the dryer)

  9. Cover and set crock pot on low for 8 hours

  10. Go to work

  11. Try and have fun at work. If not, try and compose the next Great Literary Epic using nothing but Notepad and 3 cups of stale coffee

  12. Return home and steam broccoli

  13. Feed Mr. Whiskers your cat.

  14. Serve Beefy, mushroomy, oniony creation over steamed broccoli - Yum!
