Chicken dish over rice
| 4 | cups white rice, cooked |
| 2 | chicken breast, meat only cubed |
| 1 | tablespoon olive oil |
| 1 | yellow onion, diced |
| 1 | carrot, peeled and chunked |
| 20 | ounce tomatoes, diced |
| 12 | ounce pineapple, chunked |
| 1 | green bell pepper, diced |
| 1 | teaspoon salt |
| 2 | teaspoon pepper |
| 1 | cup water |
- Brown chicken in pan with onioin and olive oil.
- When chicken is cooked, add vegetables, pineapple, salt, pepper, and water. Reduce to a simmer.
- Simmer 10-20 minutes.
- Serve over hot rice.
