Directions
- Boil chicken in the water with onion, garlic, lemon juice, salt, and pepper until cooked through (about 1 hour over medium heat.)
- Remove chicken breasts from water and shred or dice the chicken into bite-size chunks, then put the chunks back into the pot along with the tomato paste, celery, carrots, and sausage. Let simmer over low-med heat for about 30-45 minutes; stirring occasionally.
- Stir in parsley and basil. Simmer for another five minutes, then serve immediately.
