Vegetable Soup

Makes 12 servings

Healthy Soup!

Ingredients
1/2 cup zucchini
1/2 cup carrots
2 medium potatoes
1/2 medium onion
1 clove garlic
1/2 cup bean sprouts
16 oz chicken broth
Directions
  1. Chop zucchini, garlic, and onion.

  2. Peel and chop carrots and potatoes.

  3. Wash bean sprouts.

  4. Put all ingredients into large soup pot.

  5. Bring to a boil

  6. Simmer for 15 minutes (or until vegetables are at desired softness).

  7. Pour soup into blender and pulse until desired chunkiness.
