Pumpkin Cream Cheese Muffins Recipe

This can make 4 larger servings BUT it is only 6 carbs if made into 6 muffins.

Ingredients
8 oz Neufchatel Cheese
1 1/4 cup Egg Substitute
1 SPLENDA QUICK PACK No Calorie Sweetener Pouches
15 oz of pumpkin
1/2 tbsp pumpkin pie spice
1 tsp cinnamon
Directions
  1. Combine all ingredients. Pour batter into a glass baking dish or muffin pan that has been sprayed with nonstick spray.

  2. Bake in a 350oF oven until center is done - it will look 'puffed', but will shrink down as it cools.
