Vegetable Side Dish
| 10 | ounces frozen spinach |
| 2 | tablespoons all purpose flour |
| 2 | teaspoons lard |
| 1/4 | teaspoon salt |
- Remove spinach from package and place on microwave safe dish. Defrost spinach in microwave on high for 7 minutes.
- In heavy small fry skillet, put flour and salt over high heat. Stir occasionally until flour starts to brown. Turn off heat.
- Add lard (bacon fat is best)to flour. Stir until melted and blended with flour.
- Add defrosted spinach, stir until roux is blended with spinach.
- Serve hot.
