Spinach in Roux Recipe

Vegetable Side Dish

Ingredients
10 ounces frozen spinach
2 tablespoons all purpose flour
2 teaspoons lard
1/4 teaspoon salt
Directions
  1. Remove spinach from package and place on microwave safe dish. Defrost spinach in microwave on high for 7 minutes.

  2. In heavy small fry skillet, put flour and salt over high heat. Stir occasionally until flour starts to brown. Turn off heat.

  3. Add lard (bacon fat is best)to flour. Stir until melted and blended with flour.

  4. Add defrosted spinach, stir until roux is blended with spinach.

  5. Serve hot.
