Egg dish with lots of vegies. This makes an entire meal. You may want to add whole wheat bread to the plate, and a fresh fruit cup.

Ingredients

tbls extra virgin olive oil |
| 1 |
c yellow squash (chopped) |
| 1/2 |
c Onion (chopped) |
| 1 |
c. spinach |
| 1 |
clove garlic |
| 1 |
large eggs |
| 2 |
egg whites |
| 1/2 |
c Feta Cheese |
| 3/4 |
c tomatoes (chopped) |
| 1 |
tsp dill weed |
Directions
- saute vegies in olive oil until slightly crisp
- Meanwhile beat eggs well and add feta cheese, salt and pepper to taste. Add dill.
- Brown and lift slightly so egg mixture can run under.
- Place in Broiler Oven until top is brown and eggs are set well.
