Baked Orange Roughy

Prepare 2 hours early, fish needs to soak in milk for two hours before cooking. Use skim milk which will be drained off before cooking, so it is not included in the nutrition facts.

Ingredients
4 ounces Orange Roughy
1 tablespoon Light Ranch Dressing
1 tablespoon bread crumbs
Directions
  1. Soak milk in skim milk (in refrigerator) at least 2 hours. Discard milk. Spread fish with 1 tablespoon light dressing and sprinkle with 1 tablespoon crumbs and season. Bake at 350 in a dish sprayed with cooking spray for 20-30 minutes.
