Chewy Oatmeal Raisin Cookies

Makes 30 servings

Low fat, low cal. Using applesauce instead of margarine. Using egg whites instead whole egg. Mmmmm, yummy. I tweaked a recipe I found on CC.

Ingredients
1 3/4 cup unsweetened applesauce
3/4 cup brown sugar
2 egg whites
1 tablespoon vanilla extract
3 cups rolled oats
1 cup wheat flour, whole grain
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1 cup raisins
Directions
  1. Preheat the oven to 375 degrees F (190 degrees C).

  2. In a large bowl, cream together the applesauce and brown sugar until smooth.

  3. Beat in the egg whites then stir in the vanilla.

  4. Mix in the flour, oats, baking soda and cinnamon until well blended.

  5. Fold in the raisins.

  6. Drop by rounded spoonfuls onto cookie sheet.

  7. Bake for 8 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
