cups water |

lb. spinach |
| 5 |
cloves garlic |
| 1 1/2 |
cups soymilk |
Directions
- Boil onion, potatoes, water, and salt; simmer until potatoes are tender.
- Remove from heat, add spinach and garlic.
- Puree in cooking water; return to saucepan.
- Stir in soymilk.
- Adjust salt and add white pepper to taste.
- Serve hot with nutmeg.
