Blueberry Muffins

Beautiful light, fluffy, golden blueberry muffins are perfect for breakfast, brunch or an afternoon snack. They are a satisfying treat to fill the empty space and tease those tastebuds!!

Ingredients
1 1/2 cups plain flour
1/4 cup white sugar
2 tsp baking powder
1/4 tsp salt
2 eggs
4 tbsp butter
3/4 cup milk
1 tsp vanilla
1 cup blueberries
Directions
  1. Pre heat oven to 200 degrees Celcius, and

  2. prepare a 12 cup muffin tray.

  3. Sift the flour, sugar, baking powder and salt into a large mixing bowl. In another bowl, whisk the eggs until blended. Add the melted butter, milk vanilla and lemon rind to eggs and stir thoroughly to combine.

  4. Make a well in dry ingredients and pour in egg mix. With a large metal spoon, stir until flour is just moistened, but not smooth.

  5. Add blueberries to mix and gently fold in.

  6. Spoon the batter into muffin pans leaving room for muffins to rise. Bake for 20-25 mins until tops spring back when lightly touched.

  7. Leave in pan for 5 mins to cool before turning out onto a wire rack.
