Beautiful light, fluffy, golden blueberry muffins are perfect for breakfast, brunch or an afternoon snack. They are a satisfying treat to fill the empty space and tease those tastebuds!!

Ingredients

cups plain flour |
| 1/4 |
cup white sugar |
| 2 |
tsp baking powder |
| 1/4 |
tsp salt |
| 2 |
eggs |
| 4 |
tbsp butter |
| 3/4 |
cup milk |
| 1 |
tsp vanilla |
| 1 |
cup blueberries |
Directions
- Pre heat oven to 200 degrees Celcius, and
- prepare a 12 cup muffin tray.
- Sift the flour, sugar, baking powder and salt into a large mixing bowl. In another bowl, whisk the eggs until blended. Add the melted butter, milk vanilla and lemon rind to eggs and stir thoroughly to combine.
- Make a well in dry ingredients and pour in egg mix. With a large metal spoon, stir until flour is just moistened, but not smooth.
- Add blueberries to mix and gently fold in.
- Spoon the batter into muffin pans leaving room for muffins to rise. Bake for 20-25 mins until tops spring back when lightly touched.
- Leave in pan for 5 mins to cool before turning out onto a wire rack.
