Blueberry Muffins Recipe

Blueberry muffins with yogurt

Ingredients
2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 cup canola oil
1/3 cup sugar
2 eggs
3/4 cup fat-free yogurt
1 tsp vanilla
2 cups blueberries
Directions
Mix dry ingredients well. In a separate bowl, beat oil, sugar, eggs. Add yogurt (or fat-free sour cream)and vanilla to wet ingredients. Add flour mixture to wet ingredients. Stir until moistened. Fold in berries. Grease muffin tins. Bake at 350 degrees for 30 minutes. Let stand 5 minutes. Makes 12 muffins.
