Graham Cracker Cake

From CulinaryKidneyCooks.Com with brand-names added. graham crackers, Hood Country Creamer or Calorie Countdown, Jell-o sugar-free cook-and-serve vanilla pudding mix, regular Cool Whip Nutrients/exchanges per Culinary Kidney Cooks made with nondairy creamer: Potassium 47 mg, Phosphorus 78 mg, 1 Starch, 1 Nondairy Milk Substitute cvt

Ingredients
12 squares graham crackers (18173)
2 cups Calorie Countdown or Hood Country Creamer (97274)
24 g (1 small package) Jell-o sugar-free cook-and-serve vanilla pudding mix (19278)
144 g (2 cups) Cool Whip (108597)
Directions
  1. Line the bottom of an oblong 8 x 12 inch pan with 6 whole graham crackers.

  2. Mix nondairy milk substitute with pudding mix and cook over medium heat until thickened.

  3. Spread half of the pudding mixture over the crackers. Add another layer of graham crackers and spread remaining pudding on top. Cool to room temperature.

  4. Cover with nondairy whipped topping.

  5. Cover the pan with plastic wrap and refrigerate for 24 hours.

  6. Cut into 10 pieces and serve.
